BBQ Chicken Poutine


Embellish the classic Canadian comfort dish with tender, saucy, spicy pulled BBQ chicken!


  • 1 lb boneless, skinless chicken breast
  • 1 1/2 c. spicy bbq sauce
  • 1 c. drained, rinsed canned black beans
  • 32 oz. chicken broth
  • 12 oz. cheddar cheese curds
  • 1 stick (1/2 cup) butter
  • 1/4 c. cornstarch, mixed with 3-4 tablespoons of water
  • 1/4 c. flour
  • salt and pepper to taste
  • 1 bag (32 oz) frozen French fries


To make chicken:

  1. Cook chicken by method of choice and shred. (I typically cook it in the slow cooker or Instant Pot with a 1/4 c. of bbq drizzled over top while cooking).
  2. Mix 1 1/2 cups of bbq sauce into chicken. Stir in black beans and set aside.

To make gravy:

  1. Heat a skillet over medium heat. Add butter and let melt.
  2. As soon as butter is melted, whisk in flour and cook for 3 minutes, stirring often.
  3. Pour in chicken broth. Whisk to combine until smooth, still cooking over medium. Bring to a boil, stirring occasionally.
  4. When gravy is boiling, pour in cornstarch and whisk constantly until smooth and combined. Simmer for 5 minutes, or until sauce thickens. Season with salt and pepper to taste.

To assemble poutine:

  1. Bake or air fry frozen French fries according to directions on bag.
  2. Place a pile of fries on each plate.
  3. Spoon a scoop of bbq chicken mixture on top of the fries.
  4. Top with gravy. Sprinkle with cheese curds and let sit for a minute before serving (to let cheese start melting).
