These berry bars are gluten free and vegan! They are a healthy, easy, and delicious breakfast and will make you glad that it's morning. Try more recipes at Pop Shop America.


  • 1 1/2 cup oats
  • 3/4 cups oat flour
  • 1/4 cup almond flour (optional: instead of almond, just use 1 full cup oat flour)
  • 1/3 cup Pure Maple Syrup or Raw Organic Honey
  • 1/3 cup coconut oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon vanilla salt (or regular salt)
  • 2 1/2 + 1 1/2 cups berries (I used raspberries and blueberries)
  • 1/2 juice of 1 Lemon
  • 1 tablespoon Chia Seeds
  • 1 teaspoon Cornstarch


1. Preheat Your Oven to 375.
2. Mix all but the last 4 ingredients in a bowl with a fork until it is a crumble like texture and will stick together when pressed between your fingers
3. Take about 2/3 of the mixture and press it down into an 8x8 glass baking dish. Reserve last 1/3 for crumble topping.
4. Combine the first quantity of berries with lemon juice, chia seeds and cornstarch.
5. Using a fork, mash the berries up until they resemble a chunky jam. Pour on top of oat crust.
6. Place the remaining quantity of whole berries overtop of berry mixture, spreading them into an even layer.
7. Crumble the remaining oat mixture evenly overtop of the berries and press down slightly.
8. Bake for 40 minutes, or until berry mixture is bubbling slightly at the edges of the pan.
9. Allow to cool and slice into squares.
10. Serve with yogurt.
