Vanilla Bean Blueberry Muffins

These muffins have tons of vanilla bean flavor but not too much sugar! Try this perfect breakfast recipe.


  • 1 cup Sugar
  • 1/2 cup Butter (at Room Temp.)
  • 2 Eggs
  • 2 tablespoons Vanilla Extract
  • 1 tablespoon Vanilla Bean Paste
  • 2 teaspoons Baking Powder
  • 1 pinch Salt
  • 2 cups All Purpose Flour
  • 1 cup Milk
  • 3 cups Fresh Blueberries (Too Ripe Blueberries are Best!)


1. Preheat oven to 375°
2. Beat together butter and sugar until creamy.
3. Add the eggs, one at a time, and mix thoroughly.
4. Beat in the vanilla extract and vanilla bean. Then add the baking soda and salt and continue to mix thoroughly.
5. Add small amounts of flour and milk alternating between the two and mixing thoroughly.
6. Using just a spoon, gently and carefully, fold in your blueberries and mix thoroughly.
7. Add cupcake liners to your cupcake pans and spoon the batter to 1/2 or 3/4 full. Do not fill all the way.
8. Bake at 375° for 15-20 minutes until golden brown.
