s'mores cupcake with marshmallow buttercream

S'mores Cupcakes

Servings 24 cupcakes

Ingredients
  

  • 1 box vanilla cake mix
  • 1 c. water
  • 1/2 c. vegetable or canola oil
  • 3 eggs, room temperature
  • 3 chocolate bars, such as Hershey's
  • 1/2 c. broken graham cracker pieces
  • 1 c. mini marshmallows or quartered jumbo marshmallows

Instructions
 

  • Preheat oven to 350. Spray two 12-cup muffin tins.
  • In large mixing bowl, mix together cake mix, water, oil and eggs. Stir until combined and mostly smooth.
  • Mix in marshmallows and graham cracker pieces. Break chocolate into small pieces and stir in.
  • Pour batter into prepared muffin tins. Fill cavities 2/3 full. Top with a broken piece of chocolate.
  • Bake cupcakes at 350 for 12-15 minutes, or until tops are golden brown and gently spring back when touched.
  • Remove from oven and let cool completely before frosting.

Notes

Note: When the cupcakes come out of the oven, they may look a little bit like they exploded. This is just because the marshmallows puffed up when they were cooked and then deflated, leaving a bit of air space. It’s fine – and those spots will be covered up when you frost them!
